I love canned chicken because it is a great way to store your chicken for a long period of time and shelf stable. Dressed chicken should be chilled for 6 to 12 hours before canning. Dressed rabbits should be soaked 1 hour in water containing 1 tablespoon of salt per quart, and then rinsed.

Remove excess fat. Cut the chicken or rabbit into its suitable size parts for fitting into your jars leaving required headspace. Almost all canners draw on a home freezer either as their actual primary storage, supplemental storage, or as “temporary” storage until they get time or enough of something to do a canning run.

It’s doubtful that many canners would voluntarily surrender the use of a home freezer; it’s also doubtful that freezer owners would surrender access to good home canning and preserves either, if they had it.

If you are in the heat of a green bean canning session and someone comes home with a carload of blueberries, there’s no need to panic: just wash and stem the berries, and toss them as is into the freezer so you can deal with them later.

And, the rest of the year, you can lighten the load on your overcrowded freezer by moving some of the stuff out and into jars. Great idea to freeze tomatoes before canning. I get overwhelmed with canning at the end of summer, and it would be nice to have the option of canning tomatoes on a cold wintery day.

"Pressure canning is the only safe method for home canning vegetables. Clostridium botulinum is the bacterium that causes botulism food poisoning in low-acid foods, such as vegetables. The bacterial spores are destroyed only when the vegetables are processed in a pressure canner at degrees Fahrenheit (F) for the correct amount of time.

Preserve food by water-bath canning, pressure canning, freezing, or drying — all are time-honored and safe techniques. Canning and preserving are great ways to save foods at their peak freshness and flavor and to stock your pantry with nutritious and delicious fare.

If standard canning jars with narrow mouths are used for freezing, leave extra headspace (see Table 1) to allow for the expansion of foods during freezing. Expansion of the liquid could cause the jars to break at the neck.

Some foods will need to be thawed completely before removing it from the jar. First, when pressure canning chicken, meats (or any low acid food), the processing temperature must be degrees-F to destroy bacterial spores that emit toxins.
